Intense umami
Creamy sweetness
No astringency
Deep, mellow aroma

Gokou is one of the rarest matcha cultivars in Japan — grown on a handful of farms in Wazuka, Kyoto, a cultivar well suited to tencha, the shaded leaf that is stone-milled into matcha. The flavor profile is unlike standard matcha. Dark chocolate, sweet cream, oceanic minerality — layered, dense, with a long finish. Not a simple cup.

First harvest, shade-grown, stone-milled. Takayuki Matsuda, Wazuka, Kyoto.

What is [high-grade] matcha?

The term [ceremonial grade] has become a marketing label. We prefer to call matcha what it actually is: high-grade matcha. Not because it sounds premium, but because it reflects the quality in the cup.

[Brighter green colour, smoother texture, natural sweetness and a cleaner] more balanced taste. Good matcha looks different, tastes different and feels different from the very first sip.
